slop in gearbox sprocket movement
When changing gearbox sprocket even when tightened with the retaining plate I've noticed quite a bit of movement both inwards and outwards on the splines (therefore throwing chain alignment out) as well as a bit of rocking lateral movement as well, is this down to wear on the shaft (I hope not) or in the sprockets themselves ?

more like in "it's normal"
can't tell from here how "bad" yours is, but the sprocket always has play and never feels "fixed" on the splines.

Based on the origin of your bike, I would guess it's fine.

Re: slop in gearbox sprocket movement
I put a bend/bow in my plates this removes some of the play
